I'm tired of eating porridge or mashed potato for couple of straight weeks. Even if those carbs were combined with delicious fish soup and sautéed corned beef with spaghetti sauce. That's why I've been trying to diversify my carbs intake with bread. Weirdly, I chose of pandanus bread from the grocery store couple of days ago. I thought it was softer than regular white bread and for sure whole wheat bread, but I was wrong. It wasn't that soft. Ugh.
Oh, have I told you why the fuss with these whole soft carbs about? It's because of the post extracting surgery of my wisdom tooth weeks ago. The still soft open gum needs an extra tender care, and my dentist strongly suggests that I must chew only anything soft. Right, I'm once again a toothless baby, sort of.
Ok, back to the pandanus bread then. Umm, to make it softer, I thought I need to stew it. So, yesterday was the big day of this experimental 'debut' of a very important food of mine. Yeah, that's an exaggeration.
I decided to make the bread into a soft dough with cheese as the mixture and mayonnaise fish spread as the filling. At least, that's the plan! But then, I realised that the green colour of the bread was sort of boring and less appealing --then, how would I be interested in eating it?-- thus, I found a brilliant idea (ha!) to put some red colour from a carrot! A little problem then, because I have to ensure that I can chew the carrot. So, no other way I chopped the carrot very finely which turned it into little dots of red.
Well, all ingredients were ready: 8 slices of pandanus bread, 1 piece of carrot, 200 ml of plain milk, 2 eggs, (a lot of) cheese, a can of mayonnaise fish spread, pepper and salt. No need to put sugar, since the bread is already a bit too sweet (for me) and has strong pandanus flavour. Basically, just put everything together to make a soft dough, except for the fish, as the filling in the middle of the layers. That's the idea. Then, put it in a plate/bowl, cover it with aluminium foil and stew it for around 1 hour.

Then, voila! You'd get a very soft stewed bread for carbs diversification! And a happy gum (of mine)! :D Frankly, I was busy finding a suitable name for this 'out of nowhere food'. Came across my mind because it contains fish, then it would be the 'Fishy Stewed Pandanus Bread' but ugh, isn't it really sounds fishy then? So, considered it contains cheese, then it could be 'Cheesy Stewed Pandanus Bread'. Again, it completely cheesy to call such a food with that name, while that food is supposed to be very important for me. Ha! Then my sister gave me an idea, she said that the appearance of the bread was looked like a spotty gecko ("Yuck, how could you!" I said) only gecko has a lot darker green with reddish spots. Then, there it is I decided to name the food 'Spotty Stewed Pandanus Bread'. Yes, after the gecko. Kidding :D
Note: If you don't like pandanus flavour, you have to avoid this food. Because even after the bread is completely moist, fluffy and cook, the pandanus flavour is still dominating the entire food.
